Keep Local Farms

Connecting New Englanders with
local dairy farm families.
August 2011

Boy has it been hot outside! With temperatures reaching into the 80s and 90s, you can be sure that many dairy cows are looking for some shade in the pasture or barn to cool off. Did you know some farms use a system of spray misters and large fans to keep the cows cool in the summer?

What do you do in the summer to stay cool?

Grilled to Perfection

Don't let the summer grilling season pass you by without one last cookout. Whether you're cooking up beef, chicken, pork or veggies, adding dairy to the plate is always a crowd pleaser. Here are some dairy delicious tips for your next barbeque:

  • Add low-fat cheese to your burger
  • Combine plain yogurt, diced cucumber, and chopped parsley for a unique sandwich dressing
  • Create a frozen yogurt sundae buffet or fruit smoothie for dessert

Farmer Spotlight:

Dave Smith

Smith's Country Cheese,

Winchendon, MA

Dave Smith is the Big Cheese at Smith's Country Cheese, or as his daughter puts it, he's "The Aged Gouda." Dave and his wife, Carol, have been dairy farming for over 40 years and making cheese for the last 26. Home to 200 cows, the farm is a picturesque, eco-minded and highly productive business. After installing roof solar collectors, energy efficient lighting, and energy efficient motors, Smith managed to cut the farm's carbon emissions by more than 60% in only three years. There's nothing cheesy about that!

Watch a farm tour of Smith's Country Cheese with Dave Smith by visiting the Meet Local Farmers section of KeepLocalFarms.org.
